The "Cowboy Killer" is a notorious name for a cocktail, and it lives up to its reputation with potent variations.  Here, we explore two distinct takes on this drink: a spicy twist and a smoky Manhattan riff.

1. Spicy Cowboy Killer

This version is a fiery adventure, perfect for those who enjoy a kick.

Ingredients:

  • 1 ½ oz Irish Whiskey (Cask Strength recommended)
  • 1 ½ oz Bourbon Whiskey (Cask Strength recommended)
  • 2 dashes Angostura bitters
  • 1 dash Habanero bitters (optional)
  • ½ oz Fresh lime juice
  • Coca-Cola (made with cane sugar for best flavor)

Instructions:

  1. Assemble all your ingredients and a shaker filled with ice.
  2. Combine the Irish whiskey, bourbon, Angostura bitters, habanero bitters (if using), and lime juice into the shaker.
  3. Shake vigorously for 15 seconds to ensure everything is well-chilled and combined.
  4. Strain the concoction into a glass filled with fresh ice.
  5. Slowly top the drink with Coca-Cola, allowing the two liquids to gently mix.
  6. Habanero bitters are potent. Start with a single dash and adjust to your heat tolerance.

2. Smoky Cowboy Killer (Manhattan Riff)

This version takes inspiration from the classic Manhattan, with a smoky twist courtesy of Islay Scotch.

Ingredients:

  • 1 ½ oz Scotch (blend recommended)
  • ½ oz Islay Scotch (known for its peaty flavor, like Laphroaig)
  • ¾ oz Punt e Mes (a sweet vermouth with a touch of bitterness)
  • ¼ oz Luxardo Maraschino liqueur (sweet cherry liqueur)
  • 2 dashes Peychaud's bitters
  • Lemon twist (for garnish)

Instructions:

  1. Fill a mixing glass with ice.
  2. Add all ingredients except the lemon twist to the mixing glass.
  3. Stir for 30 seconds with a bar spoon to ensure proper chilling and dilution.
  4. Strain the drink into a chilled cocktail glass.
  5. Express the oils from a lemon twist over the drink and garnish with the twist.
  6. Experiment with the ratio of Scotch to Islay Scotch to find your perfect balance of smokiness.
