Paloma Negra: A Smoky Citrus Escape with Mezcal

The Paloma Negra, translating to "Black Dove" in Spanish, takes flight with mezcal's smoky intrigue. This recipe reimagines the classic Paloma cocktail, swapping tequila for mezcal and creating a complex and refreshing drink.

Ingredients:

  • 2 ounces Mezcal (Espadin for a lighter smoke or Tobalá for a more pronounced smokiness)
  • 1 ounce Grapefruit Juice (freshly squeezed for the best flavor)
  • 1/2 ounce Lime Juice (freshly squeezed for the best flavor)
  • 1/4 ounce Agave Nectar (or simple syrup)
  • Grapefruit Soda (to top)
  • Lime Wedge (for garnish)
  • Flaky Sea Salt (for rimming the glass)

Instructions:

  1. Prep the glass:  Run a lime wedge around the rim of a highball glass. Dip the rim in flaky sea salt to create a beautiful and flavorful border.

  2. Combine liquids: In a cocktail shaker filled with ice, add mezcal, grapefruit juice, lime juice, and agave nectar.

  3. Shake it up: Shake vigorously for 10-15 seconds until well chilled and slightly frothy.

  4. Strain and serve: Strain the Paloma Negra into the prepared highball glass filled with fresh ice.
